Chasen and Chashaku: How to Choose a Matcha Whisk, and Why the Prong Count Counts Half

The long answer is that the count maps to a technique. Koicha — thick tea — is about 4 g of matcha worked into roughly 30 ml of water until it is a paste. You are kneading, not whipping, and you need prongs stiff enough to push against. That is what the araho (16) and chū-araho (36) whisks are for: few prongs, thick prongs. Usucha — thin tea, the one you are making at home — is about 2 g into 60 ml, whisked briskly until the surface carries a fine foam. Chasen are made mostly from hachiku bamboo, and the version you will see most often is shiratake, white bamboo, sun-bleached until it is pale. Urasenke and most other schools use it. Buy an 80- or 100-prong shiratake chasen made in Takayama, $25–45, plus a plain ceramic whisk rest. Don’t buy the 120-prong “professional” whisk first, and don’t buy the $8 unbranded one if you drink matcha more than once a week — its prongs are fewer and coarser than the sleeve implies and they snap early. Washing it: three rules, and one that everyone breaks
Before the first use, stand the head in warm — not boiling — water for a few minutes, turn it gently, and let the curled tips relax and the maker’s starch sizing come away. Wipe it and it is ready.
Before each bowl, dip the tips in warm water and swirl for a few seconds. Damp bamboo bends; dry bamboo snaps. This one habit does more for the lifespan of a whisk than anything else on this page.
After each bowl, swirl it hard in warm water in the chawan itself and work any residue out with your fingers. No detergent. No scrubbing pad. Then dry it standing on a kusenaoshi, the ridged ceramic whisk rest, somewhere with moving air. The rest is sold as a shape-keeper and it does hold the prongs open, but the more important thing it does is keep the head off a wet surface. Practitioners argue about whether leaving a whisk on the rest permanently stretches the prongs. I think that argument is a distraction: what actually kills whisks is a damp head shut inside a cupboard.
The chashaku comes from the same village — and the same idea
Takayama does not only make whisks. The same secret-handed workshops have long produced chashaku (tea scoops), hishaku (water ladles), flower vessels and incense containers. And the chashaku repeats the lesson exactly: it is one piece of bamboo, shaved thin, bent at the tip, with nothing added.
Which means the node — the hard ring where the bamboo grew a joint — is not decoration. Its position is the design, and it sets the formality grade:

But be clear about what the tool is. A chashaku is a shape, not a volume. Two scoops from a generous hand and two from a cautious one differ by nearly a gram, which is half a bowl’s worth of strength.
