What Size Hangiri (Sushi Oke)? Read the Rice, Not the Tub

For most households the answer is the 30 cm tub. Not because 30 cm is a lucky number, but because a Japanese maker’s own sizing chart says a 30 cm hangiri holds three of rice at a depth of 26 mm — and 26 mm is a layer that cools. Freshly cooked rice arrives at the tub carrying more water than sushi rice should have, and you are about to add more liquid in the form of seasoned vinegar. Read down the depth column and the pattern jumps out. Every size a household would own lands between 15 mm and 40 mm. The depths only climb past that — 49, 60, 75 mm — once you reach the sizes a restaurant buys, where somebody is cutting and fanning the rice continuously and turning the whole mass over as they go. Buying one size too small is the mistake people actually make

Nobody buys a 45 cm restaurant tub for a two-bedroom flat. The real error runs the other way: the 24 cm looks like a sensible starter size, costs a little less, and stores easily — so people buy it and then cook three in it, because three is what a family of four eats.

You can work out what that does. Take the maker’s own numbers, back out the volume of finished sushi rice per — it comes to roughly 500–530 ml once cooked and loosened — and drop the same three into each size. The model reproduces the maker’s published 26 mm for the 30 cm tub exactly, which is a good sign it is describing the real thing.

Forty-three millimetres is not a catastrophe. It is the difference between rice that separates into distinct grains and rice that goes slightly claggy at the bottom while the top dries out. You will taste it, and you will blame your vinegar ratio.

Buy this, not that

Buy the 30 cm if you cook 2–3 at a time, which covers most households up to four people. Size up to 33 cm only if you routinely make 5 . Traditional tubs are bound with two copper bands. Copper is soft enough to be worked tight around the staves by hand and stiff enough to hold them there. It also darkens — makers explicitly warn that the copper may go dull or patchy from temperature swings in transit, and that this is cosmetic. Do not send one back because the bands arrived brown.

Below roughly $50 you are usually looking at a thinner, wider-grained tub, often not sawara, and sometimes not made in Japan at all.

First use, and the step the two makers disagree about

Here is a genuinely useful thing you will not find on a comparison site: makers do not agree on how to break one in.

If none came with it, the soak is the conservative choice — it costs you an afternoon and swells the staves against the bands.

  • Before every use, wipe the inside with a lightly damp cloth. This is the step people skip, and it is why their rice sticks. A dry tub grabs the first layer of grains; a faintly damp one releases them.
  • After use, wash with water or warm water, with a mild neutral detergent only if you need it. Umezawa specifically says to avoid chlorine-based cleaners.
  • Then dry it properly — upside down, in a shaded, ventilated spot, all the way through before it goes back in the cupboard. Umezawa’s care note puts it plainly: dry thoroughly when unused, to prevent mould and the like.

What makes a wooden tub worth $100 is frequency plus the willingness to dry it. A hangiri that lives in a damp cupboard, still faintly wet from last time, is worse than the baking dish. Be honest about which household you are before you buy, the same way you would when deciding how many rice bowls you actually need.
